- Preheat the oven to 180°C and grease 6 silicone muffin cups or a 6-cup muffin tin.
- Heat the oil in a pan over medium-high heat. Add the pepper and onion. Sauté until softened and the onions are translucent.
- Add the salami/ham and cook for 1-2 minutes.
- Remove from the heat and stir in the tomatoes.
- In a bowl, whisk together the eggs, season with salt and pepper, then stir in 1/2 cup of cheese and the salami mixture. Pour the egg mixture into the prepared muffin cups.
- Sprinkle the remaining cheese over and bake for 15-20 minutes, until the eggs are set and golden.
- Serve warm or cool completely before refrigerating or freezing. Enjoy!
