Nut Butter and Ladismither Hummus

Ingredients

  • 2 x 410g tins chickpeas, drained, rinsed
    and skins discarded
  • 2 garlic cloves, peeled and chopped
  • 2 tbsp. smooth nut butter, of choice
  • 2 tbsp. olive oil, plus extra
  • 2 tbsp. lemon juice, plus extra to taste
  • 100g Ladismither, grated
  • Pinch of smoked paprika
  • Salt and pepper to taste

Method

  1. Place the chickpeas, garlic, nut butter, cheese and lemon juice in a food processor and process until smooth. Slowly drizzle in olive oil with the processor running. Add water by the tablespoon between pulses until the desired creamy texture.
  2. Season to taste with paprika, salt and pepper. Taste and adjust with more lemon juice to taste. You can also add more olive oil for a smoother, creamier texture.
  3. Transfer the hummus to a serving bowl and sprinkle with some extra paprika. Drizzle with some olive oil and serve with warm flatbread, vegetables, crackers or
    use as a spread on bread or sandwiches
